Gardening 101 ~ Eggplant Parmesan & Salsa Verde



Last year was our first year trying eggplant in our garden.  
It was not a successful at all.
However we wanted to give it a try once more.
This year JACKPOT.
I think we should have planted less because for awhile we 
had so many eggplants all at once.
 We tried this baked eggplant parmesan.

This year was our first year trying our hand at Tomatillo.
We found once again, we planted too many.
We had a couple of plants very successful.
 We made a batch of Salsa Verde.
